Our Spanish paprika is milder than our Hungarian paprika but sweeter and still robust in flavor and aroma. It is the one to have on hand in the kitchen. The Chiles are sun dried and not smoked. It is a painstaking process with the result being worth it. It is the one used most often for color, think deviled eggs.
Paprika is an excellent substitute for chile, as it delivers the same flavor profile without the heat. You can make a mild yet tasty curry simply by replacing the ground chile with an equal quantity of paprika. Paprika can also be used to tone down the heat of chile if you’ve been a bit heavy-handed.
